High Protein, Low Calorie Beef Arayes
Every time I scroll on social media, one of the most popular dishes I’ve seen were these Beef Arayes so I decided to make these on a random evening and couldn’t believe how good they were—crispy, juicy, and packed with flavor. After that, I wanted to make a version that fit my macros without losing that same texture and taste. Using lean ground beef, whole wheat pita, and a quick yogurt tahini sauce, this version keeps things light but just as satisfying. It’s one of my favorite high-protein meals to meal prep or make fresh for dinner when I want something different from my usual rice bowls.

- 2lb lean 93/7 ground beef
- 1 grated medium onion
- 2 tsp garlic paste (or 4 garlic cloves diced)
- 1/2 cup fresh parsley
- 5 pita bread sliced
- Cooking spray
Seasonings
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 2 tsp paprika
- 1 tsp coriander
- 1 tsp cayenne
- 1 tsp all spice
Yogurt Sauce
- 1 cup greek yogurt
- 1 tbsp honey
- 2 tsp garlic paste
- 1/4 lemon juice
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp pepper
- 1/2 tsp cumin
- 1/4 cup chopped parsley
Step-By-Step Instructions
- In a food processor, blend grated onion, garlic, and chopped parsley into a smooth paste. Squeeze out any excess moisture using a paper towel or cheesecloth.
- Add the paste to 2 lb of ground beef along with your seasoning blend, and mix thoroughly until well combined.
- Slice pita breads in half and carefully stuff each half with the beef mixture, pressing it evenly so the filling reaches all the edges.
- Preheat a cast-iron skillet over medium-low heat.
- Cook the arayes, lightly spraying with avocado oil on each side. Cook for 3–4 minutes per side, then increase heat to medium and sear for 4–5 minutes until the meat is browned and the pita is crispy.
- For the yogurt tahini sauce, whisk together Greek yogurt, tahini, garlic paste, lemon juice, chopped parsley, and your seasoning blend in a bowl until smooth. For a thinner consistency, add a splash of water. Refrigerate if you prefer it chilled before serving.
