Breakfast Sandwich

These sandwiches are perfect for busy mornings or post-workout meals. You can make a full batch ahead of time, store in the fridge or freezer, and reheat in the microwave or toaster oven when you need them. They’re simple, filling, and way better than a protein bar.

Ingredients

  • 5 eggs
  • 1¼ cup cottage cheese
  • 1 lb Jennie-O Lean Turkey Sausage
  • 5 cheese slices
  • 5 English muffins (I used Dave’s Killer Bread)
  • Sriracha mayo (optional)
  • Salt and black pepper to taste

Step-By-Step Instructions

  1. Make the Egg Squares
    • Blend eggs, cottage cheese, and a pinch of salt until smooth. Pour onto a parchment-lined baking sheet, season with pepper, and bake at 400°F for 8–10 minutes.
  2. Cut and Set Aside
    • Once baked, slice the egg into 6 squares—you’ll have 1 extra for a snack.
  3. Cook the Sausage Patties
    • Divide the turkey sausage into 5 equal portions, flatten into patties, and air fry at 400°F for 10–12 minutes or until fully cooked.
  4. Toast the Muffins
    • While the patties cook, toast your English muffins to your liking.
  5. Assemble
    • Stack each sandwich with a muffin base, egg square, sausage patty, slice of cheese, and muffin top. Add sriracha mayo or any sauce you like.

How to Freeze and Reheat

  • To Freeze:
    • Let the cooked egg squares, sausage patties, and toasted English muffins cool completely before assembling.
    • Assemble each sandwich fully (with cheese, optional sauce, etc.).
    • Wrap each sandwich tightly in parchment paper or aluminum foil.
    • Place the wrapped sandwiches in a large freezer-safe bag or airtight container.
    • Label with the date and store for up to 1 month.
  • To Reheat From Frozen:
    • Unwrap the sandwich and loosely wrap it in a damp paper towel.
    • Microwave for 1:30–2 minutes, flipping halfway through.
    • For a crispier texture, microwave for 1–1:30 minutes, then toast in a toaster oven or air fryer for a few more minutes.
  • From Fridge:
    • Microwave for 45–60 seconds, or toast until heated through.
